Description
Chicken Rogan Josh is a rich and comforting chicken curry made with tender chicken, yogurt, tomato paste, garlic, ginger, and warm Indian spices for a bold, aromatic dinner that is perfect with basmati rice or naan.
Ingredients
1 1/2 pounds boneless skinless chicken thighs
2 tablespoons oil or ghee
1 large yellow onion, finely chopped
4 cloves garlic, minced
1 tablespoon fresh ginger, minced
2 tablespoons tomato paste
1/2 cup plain yogurt
2 teaspoons paprika
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon garam masala
1/2 teaspoon turmeric
1/2 teaspoon chili powder
1 teaspoon salt
1/4 teaspoon black pepper
3/4 cup chicken broth
1 tablespoon lemon juice
2 tablespoons fresh cilantro, chopped
Instructions
1. Heat the oil or ghee in a large skillet or Dutch oven over medium heat. Add the chopped onion and cook for 6 to 8 minutes until soft and lightly golden.
2. Stir in the garlic and ginger and cook for 1 minute until fragrant.
3. Add the paprika, cumin, coriander, garam masala, turmeric, chili powder, salt, and black pepper. Stir for 30 seconds to bloom the spices.
4. Stir in the tomato paste and cook for 1 minute until slightly darkened.
5. Lower the heat and add the yogurt gradually, stirring well after each addition until the sauce is smooth.
6. Add the chicken thighs and turn them in the sauce to coat well.
7. Pour in the chicken broth and stir to combine.
8. Simmer partially covered for 20 to 25 minutes, stirring occasionally, until the chicken is tender and cooked through.
9. Stir in the lemon juice and cook for 1 more minute.
10. Garnish with fresh cilantro and serve hot with basmati rice or naan.
Notes
Use chicken thighs for the juiciest texture and best flavor during simmering.
Add the yogurt over low heat so the sauce stays smooth and does not split.
For a spicier curry, increase the chili powder or add a pinch of cayenne.
