Instructions
1. Preheat the oven to 350°F and line two baking sheets with parchment paper.
2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
3. In a large bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy.
4. Add the egg and vanilla extract, then mix in the cooled brewed coffee until smooth.
5. Add the dry ingredients in three additions, alternating with the buttermilk, and mix just until combined.
6. Scoop the batter into rounded portions onto the prepared baking sheets, leaving space between each scoop.
7. Bake for 9 to 11 minutes, until the tops are set and spring back lightly when touched.
8. Cool on the baking sheet for 5 minutes, then transfer to a wire rack and cool completely.
9. To make the filling, beat the butter until smooth, then add the powdered sugar, marshmallow creme, vanilla extract, and enough heavy cream to make a fluffy spreadable filling.
10. Match similar-sized cakes together, spread or pipe filling onto the flat side of one cake, then top with another cake.
11. Let the assembled whoopie pies rest for 20 to 30 minutes before serving for the best texture.
Notes
Use cooled coffee so it does not melt the butter or affect the batter texture.
Do not overmix once the flour goes in or the cakes can turn dense instead of soft and tender.
