Ingredients
1 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 cup unsalted butter, softened
3/4 cup creamy peanut butter
1/2 cup brown sugar
1/2 cup granulated sugar
1 large egg
1 tsp vanilla extract
1 cup Christmas M&Ms, plus extra for topping
Instructions
1. Preheat the oven to 350°F and line two baking sheets with parchment paper.
2. In a medium bowl, whisk together the flour, baking soda, and salt.
3. In a large bowl, beat the softened butter, creamy peanut butter, brown sugar, and granulated sugar until smooth and creamy.
4. Add the egg and vanilla extract, then mix until fully combined.
5. Gradually add the dry ingredients to the wet ingredients and stir until a soft dough forms.
6. Fold in the Christmas M&Ms, reserving a few to press on top of the cookies before baking.
7. Scoop the dough into evenly sized balls and place them on the prepared baking sheets with space between each one.
8. Press a few extra Christmas M&Ms onto the tops of the dough balls for a more festive look.
9. Bake for 9 to 11 minutes, until the edges are lightly golden and the centers are just set.
