Description

Creamy Cajun Chicken Pasta Skillet is a rich and easy dinner made with tender chicken, penne pasta, Cajun seasoning, Parmesan, and a velvety cream sauce. This one-pan Cajun chicken pasta recipe is perfect for busy weeknights when you want a bold, comforting, creamy pasta skillet the whole family will love.


Ingredients

12 ounces penne pasta

2 boneless skinless chicken breasts, cut into bite-sized pieces

2 tablespoons olive oil

1 tablespoon Cajun seasoning

1 teaspoon garlic powder

1 small onion, diced

3 garlic cloves, minced

1 red bell pepper, sliced

2 cups heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

2 tablespoons butter

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons chopped parsley


Instructions

1. Bring a large pot of salted water to a boil and cook the penne until al dente. Reserve 1 cup of pasta water, then drain and set aside.

2. Season the chicken pieces with Cajun seasoning and garlic powder until evenly coated.

3. Heat olive oil in a large skillet over medium-high heat, then cook the chicken for 5 to 7 minutes until browned and cooked through. Transfer it to a plate.

4. In the same skillet, cook the onion and red bell pepper for 3 to 4 minutes until softened. Add the garlic and cook for 30 seconds.

5. Pour in the chicken broth and heavy cream, then stir in the butter, salt, black pepper, and Parmesan cheese until the sauce is smooth and creamy.

6. Return the chicken to the skillet and add the cooked pasta. Toss everything together until well coated, adding a little reserved pasta water if needed.

7. Sprinkle with chopped parsley and serve hot with extra Parmesan if desired.

Notes

Use freshly grated Parmesan for the smoothest sauce and the best flavor.

Do not overcook the pasta since it will continue to soften slightly in the hot sauce.

Add a splash of pasta water during reheating to keep the sauce creamy and loose.
