Ingredients
2 cups cooked chicken, shredded or diced
4 tablespoons butter
1 small yellow onion, diced
2 celery stalks, diced
3 garlic cloves, minced
1/3 cup all-purpose flour
2 cups chicken broth
3/4 cup heavy cream
1 1/2 cups frozen peas and carrots
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
1 refrigerated pie crust
1 egg, beaten
Instructions
1. Preheat the oven to 400°F and lightly grease a 9-inch pie dish or similar baking dish.
2. Melt the butter in a large skillet over medium heat, then add the onion and celery and cook until softened, about 5 minutes.
3. Stir in the garlic and cook for 30 seconds until fragrant.
4. Sprinkle the flour over the vegetables and stir well to coat everything evenly.
5. Slowly pour in the chicken broth while stirring, then add the heavy cream and cook until the sauce becomes smooth and thickened.
6. Stir in the cooked chicken, frozen peas and carrots, salt, black pepper, and dried thyme. Simmer for 3 to 4 minutes until the filling is creamy and fully combined.
7. Transfer the filling to the prepared baking dish and lay the pie crust over the top. Trim the edges if needed and cut a few slits in the crust.
8. Brush the top with the beaten egg.
9. Bake for 30 to 35 minutes until the crust is golden brown and the filling is bubbling.
10. Let the pot pie rest for 10 minutes before serving.

Let the filling thicken on the stove before baking so the pot pie does not turn out runny.
