Ingredients
250g linguine
2 chicken breasts
2 tablespoons olive oil
2 tablespoons butter
4 garlic cloves, minced
1 tablespoon Cajun seasoning
1 cup heavy cream
1 cup shredded mozzarella cheese
1 teaspoon salt
½ teaspoon black pepper
2 tablespoons chopped fresh parsley
Instructions
1. Bring a large pot of salted water to a boil and cook the linguine until al dente. Reserve some pasta water, then drain and set aside.
2. Season chicken breasts with Cajun seasoning, salt, and pepper. Heat olive oil in a skillet, sear chicken until golden and cooked through. Remove and slice.
3. In the same skillet, melt butter. Sauté garlic until fragrant. Add more Cajun seasoning and pour in heavy cream. Simmer until thickened.
4. Reduce heat and stir in mozzarella until melted. Add cooked pasta, toss to coat, and loosen with reserved pasta water if needed.
5. Top with sliced chicken, sprinkle with parsley, and serve hot.
