Ingredients
2 pounds chicken breast, cut into bite sized pieces
2 cups fresh spinach, chopped
1 can artichoke hearts, drained and chopped
8 ounces cream cheese, softened
1 cup sour cream
1 1/2 cups mozzarella cheese, shredded
1/2 cup Parmesan cheese, grated
3 cloves garlic, minced
1 teaspoon onion powder
1 teaspoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
Instructions
1. Preheat the oven to 375°F and lightly grease a 9×13 inch casserole dish.
2. Place the chicken pieces in a large bowl and season with salt, black pepper, onion powder, and Italian seasoning. Drizzle with olive oil and toss to coat.
3. In a separate large bowl, mix the softened cream cheese and sour cream until smooth.
4. Stir the garlic, Parmesan cheese, and 3/4 cup of the mozzarella cheese into the creamy mixture.
5. Fold in the chopped spinach and chopped artichoke hearts until evenly combined.
6. Add the seasoned chicken to the bowl and stir until all the pieces are fully coated.
7. Spread the mixture evenly into the prepared casserole dish.
8. Sprinkle the remaining 3/4 cup mozzarella cheese over the top.
9. Bake for 25 to 30 minutes, or until the chicken is fully cooked and the cheese is melted and lightly golden.
10. Let the casserole rest for 5 minutes before serving.
