Description

Creamy Tomato Soup is a rich, smooth, and comforting homemade soup made with crushed tomatoes, onion, garlic, cream, and basil for a cozy bowl that is perfect for lunch or dinner. This easy creamy tomato soup recipe is full of classic tomato flavor, simple pantry ingredients, and a velvety texture that tastes delicious with grilled cheese, crusty bread, or fresh basil on top.


Ingredients

2 tablespoons olive oil

1 tablespoon butter

1 medium yellow onion, chopped

3 garlic cloves, minced

2 tablespoons tomato paste

1 can (28 ounces) crushed tomatoes

2 cups vegetable broth

1 teaspoon sugar

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon dried basil

1/2 cup heavy cream

2 tablespoons grated parmesan, optional

2 tablespoons fresh basil, chopped, optional for garnish


Instructions

1. Heat the olive oil and butter in a large pot over medium heat. Add the chopped onion and cook for 5 to 6 minutes until soft and translucent.

2. Stir in the minced garlic and cook for 30 seconds until fragrant.

3. Add the tomato paste and stir for 1 minute to deepen the flavor.

4. Pour in the crushed tomatoes and vegetable broth, then add the sugar, salt, black pepper, and dried basil.

5. Bring the soup to a gentle simmer, reduce the heat, and cook uncovered for 20 to 25 minutes.

6. Blend the soup until smooth using an immersion blender, or carefully blend in batches in a regular blender.

7. Return the soup to low heat and stir in the heavy cream.

8. Add the parmesan if using, and stir until melted and combined.

9. Taste and adjust seasoning if needed, then serve hot with fresh basil on top.

Notes

Use good quality canned tomatoes for the best flavor and smooth texture.

Blend carefully while the soup is hot, especially if using a countertop blender.

For freezing, leave out the cream and stir it in after reheating for a fresher finish.
