Ingredients
1 lb cod fillets
1/2 cup grated Parmesan cheese
1/2 cup panko breadcrumbs
1 large egg
1 tbsp olive oil
1 tsp garlic powder
1/2 tsp paprika
1/2 tsp Italian seasoning
1/2 tsp salt
1/4 tsp black pepper
1 tbsp chopped fresh parsley
4 lemon wedges
Instructions
1. Pat the cod fillets dry with paper towels and preheat the air fryer to 400°F.
2. In a shallow bowl, beat the egg until smooth.
3. In another bowl, mix the Parmesan cheese, panko breadcrumbs, garlic powder, paprika, Italian seasoning, salt, and black pepper.
4. Dip each cod fillet into the egg, then press it into the breadcrumb mixture until well coated on all sides.
5. Lightly brush or spray the coated fillets with olive oil.
6. Place the fillets in the air fryer basket in a single layer with space between them.
7. Air fry for 8 to 10 minutes, depending on thickness, until the coating is golden and the fish flakes easily with a fork.

Notes
Use thawed cod if working from frozen, and pat it very dry so the coating sticks well.
