Ingredients
1 pound ground beef
1/2 cup finely chopped onion
2 cloves garlic, minced
1 packet taco seasoning
1/3 cup tomato sauce
4 ounces cream cheese, softened
1 cup shredded cheddar cheese
10 corn tortillas
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped fresh cilantro
Instructions
1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
2. Add the ground beef and chopped onion to a skillet over medium heat and cook until the beef is browned and the onion is soft.
3. Stir in the garlic and taco seasoning and cook for 30 seconds until fragrant.
4. Add the tomato sauce and cream cheese, then stir until the filling is creamy and fully combined.
5. Mix in the shredded cheddar cheese, salt, black pepper, and chopped cilantro, then remove the skillet from the heat.
6. Warm the tortillas until soft and flexible so they do not crack while rolling.
7. Spoon a small line of filling onto each tortilla and roll tightly.
8. Place the taquitos seam-side down on the prepared baking sheet.
9. Brush or lightly spray the tops with olive oil.
10. Bake for 15 to 20 minutes until golden brown and crisp.

Notes
Warm the tortillas before rolling so they stay flexible and do not split.
Do not overfill the taquitos or the filling may spill out during baking.
For extra crispiness, flip them once during the last few minutes of baking.
