Ingredients
2 boneless skinless chicken breasts
2 cups marinara sauce
1 cup crushed tomatoes
3 cloves garlic, minced
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
1/2 cup grated Parmesan cheese
1 1/2 cups shredded mozzarella cheese
1 tablespoon chopped fresh parsley
8 ounces cooked spaghetti
Instructions
1. In a medium bowl, stir together the marinara sauce, crushed tomatoes, garlic, Italian seasoning, salt, black pepper, and olive oil.
2. Spoon a little of the sauce mixture into the bottom of the crock pot.
3. Place the chicken breasts in the crock pot in a single layer.
4. Pour the remaining sauce over the chicken, making sure the pieces are fully coated.
5. Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours, until the chicken is cooked through and tender.
6. Sprinkle the Parmesan cheese over the sauce and top the chicken with shredded mozzarella.
7. Cover again and cook for 10 to 15 minutes, until the cheese is melted.
8. Garnish with fresh parsley and serve hot over cooked spaghetti.
Notes
Use chicken breasts of similar size so they cook evenly in the crock pot.
For a thicker sauce, leave the lid off for a few minutes after cooking before adding the cheese.
