Description

Delicious Chicken Teriyaki Noodles is a quick and flavorful chicken noodle dinner made with tender chicken, teriyaki sauce, colorful vegetables, and perfectly cooked noodles for an easy homemade meal that tastes better than takeout.


Ingredients

2 boneless skinless chicken breasts, cut into bite sized pieces

8 ounces lo mein noodles

2 tablespoons olive oil

2 cups broccoli florets

1 cup carrots, thinly sliced

1 red bell pepper, thinly sliced

3 green onions, sliced

1 tablespoon sesame seeds

1/3 cup soy sauce

2 tablespoons brown sugar

2 tablespoons honey

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 teaspoon sesame oil

1 tablespoon cornstarch

1/2 cup water

1/4 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Bring a pot of water to a boil and cook the lo mein noodles until just tender according to the package directions. Drain and set aside.

2. In a medium bowl, whisk together the soy sauce, brown sugar, honey, garlic, ginger, sesame oil, cornstarch, water, salt, and black pepper until smooth.

3. Heat the olive oil in a large skillet or wok over medium high heat.

4. Add the chicken pieces and cook for 5 to 7 minutes, stirring often, until golden and fully cooked through.

5. Add the broccoli, carrots, and red bell pepper to the skillet and cook for 3 to 4 minutes until the vegetables are tender crisp.

6. Pour the teriyaki sauce into the skillet and stir well. Let it simmer for 1 to 2 minutes until it thickens into a glossy sauce.

7. Add the cooked noodles and toss everything together until evenly coated.

8. Sprinkle with green onions and sesame seeds, then serve hot.

Notes

Use chicken thighs instead of chicken breasts if you want a juicier and slightly richer result.

Cook the noodles just until tender so they do not become too soft when tossed with the hot sauce.

Have all ingredients prepped before you start cooking because this recipe comes together quickly once the skillet is hot.
