Description

Dump and Bake Chicken Parmesan Casserole is an easy baked pasta dinner made with tender chicken, marinara sauce, mozzarella, Parmesan, and uncooked pasta all in one dish. This chicken parmesan casserole is perfect for busy weeknights, family dinners, and anyone looking for a comforting dump and bake chicken casserole with rich Italian-inspired flavor.


Ingredients

2 cups boneless skinless chicken breast, diced

12 ounces uncooked penne pasta

3 cups marinara sauce

2 1/2 cups chicken broth

3 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/2 cup panko breadcrumbs

1 tablespoon olive oil

2 tablespoons fresh parsley, chopped


Instructions

1. Preheat the oven to 425°F and lightly grease a 9×13-inch baking dish.

2. Add the diced chicken, uncooked penne, marinara sauce, chicken broth, garlic, Italian seasoning, salt, and black pepper to the dish. Stir until everything is well combined.

3. Cover the dish tightly with foil and bake for 35 to 40 minutes, or until the pasta is tender and the chicken is cooked through.

4. Remove the foil and stir gently.

5. Sprinkle the mozzarella cheese and Parmesan cheese evenly over the top.

6. In a small bowl, mix the panko breadcrumbs with olive oil, then scatter over the cheese layer.

7. Return the dish to the oven uncovered and bake for 10 to 15 minutes, until the cheese is melted and the topping is golden.

8. Let the casserole rest for 5 to 10 minutes before serving.

9. Finish with chopped parsley and serve warm.

Notes

Use a good quality marinara sauce because it gives the casserole most of its flavor.

Cut the chicken into small even pieces so it cooks at the same rate as the pasta.

If the top browns too quickly, loosely cover the dish with foil for the last few minutes of baking.
