Description
Easter Garlic Herb Carrots are a tender, buttery side dish made with fresh carrots, garlic, herbs, honey, and lemon for a bright and flavorful Easter recipe that pairs perfectly with ham, roast chicken, and other holiday favorites.
Ingredients
2 pounds carrots
3 tablespoons butter
1 tablespoon olive oil
3 cloves garlic, minced
1 tablespoon honey
1 teaspoon fresh thyme leaves
2 tablespoons fresh parsley, chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon lemon juice
Instructions
1. Peel and trim the carrots, then cut any large ones into even pieces so they cook evenly.
2. Bring a large skillet or saucepan of lightly salted water to a simmer and cook the carrots for 8 to 10 minutes, or until just fork tender. Drain well.
3. In the same skillet, melt the butter with the olive oil over medium heat.
4. Add the minced garlic and cook for about 30 seconds, stirring constantly, until fragrant.
5. Stir in the honey, fresh thyme, salt, and black pepper until combined.
6. Add the drained carrots back to the skillet and toss gently to coat them in the garlic herb glaze.
7. Cook for 2 to 4 more minutes, stirring occasionally, until the carrots are glossy and fully coated.
8. Stir in the lemon juice and fresh parsley just before serving.
9. Transfer to a serving dish, spoon the remaining glaze over the top, and serve warm.
Notes
Use carrots that are close in size so they cook at the same rate and look better when served.
Do not overcook the carrots in the first step because they will cook a little more in the glaze.
For extra color and a more festive look, use rainbow carrots and finish with additional chopped parsley before serving.
