Easy High Protein Cottage Cheese Fudge is a creamy, chocolatey no-bake treat made with blended cottage cheese, dark chocolate, and a touch of maple syrup for an easy high protein dessert you can keep chilled and enjoy anytime.
Ingredients
1 cup cottage cheese
1 1/2 cups dark chocolate chips
2 tablespoons maple syrup
1 teaspoon vanilla extract
1 tablespoon cocoa powder
1 pinch salt
Instructions
1. Add the cottage cheese, maple syrup, vanilla extract, cocoa powder, and salt to a blender or food processor. Blend until completely smooth.
2. Melt the dark chocolate chips in the microwave in short bursts, stirring between each one, until smooth and glossy.
3. Pour the melted chocolate into the blended cottage cheese mixture and blend again until thick, smooth, and fully combined.
4. Line a small loaf pan or container with parchment paper, then spread the mixture evenly into the pan.
5. Chill in the refrigerator for 2 to 3 hours until firm.
6. Lift the fudge out of the pan, slice into 12 small squares, and serve cold.
Notes
Keep blending until the cottage cheese is fully smooth so the fudge has a silky texture with no visible curds.
If your cottage cheese seems watery, drain it for a few minutes before blending to help the fudge set more firmly.
A little flaky salt on top before chilling adds a nice contrast and makes the chocolate flavor pop.
