Description
Easy Salsa Chicken Crock Pot is a simple slow cooker chicken dinner made with salsa, taco seasoning, and tender shredded chicken for an easy family meal. This crock pot salsa chicken is perfect for tacos, rice bowls, burritos, or meal prep, and it delivers bold flavor with very little effort.
Ingredients
2 pounds boneless skinless chicken breasts
2 cups salsa
1 packet taco seasoning
1/2 cup chicken broth
4 ounces cream cheese
2 tablespoons fresh cilantro, chopped
1 tablespoon lime juice
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Place the chicken breasts in the crock pot in an even layer.
2. Sprinkle the taco seasoning, salt, and black pepper over the chicken.
3. Pour the salsa and chicken broth over the top, making sure the chicken is well coated.
4. Cover and cook on low for 5 to 6 hours or on high for 2 1/2 to 3 1/2 hours, until the chicken is fully cooked and tender.
5. Shred the chicken with two forks and stir it back into the sauce.
6. Add the cream cheese during the last 20 to 30 minutes of cooking, if using, and stir until smooth.
7. Stir in the lime juice and chopped cilantro just before serving.
8. Serve warm in tacos, bowls, burritos, over rice, or with your favorite toppings.
Notes
This recipe works best with a salsa you already enjoy eating on its own, since that flavor carries through the whole dish.
For a lighter version, you can leave out the cream cheese and still have a juicy, flavorful result.
If the sauce feels too thin after shredding, leave the lid off for a few minutes and let it thicken slightly before serving.
