Ingredients
2 pounds Yukon Gold potatoes, thinly sliced
3 tablespoons butter
3 cloves garlic, minced
3 tablespoons all-purpose flour
2 cups whole milk
1 cup heavy cream
1 1/2 cups shredded cheddar cheese
1/2 cup grated Parmesan cheese
1 1/2 teaspoons salt
1/2 teaspoon black pepper
1 teaspoon onion powder
1 tablespoon chopped fresh parsley
Instructions
1. Preheat the oven to 375°F and grease a 9×13-inch baking dish.
2. Wash, peel if desired, and thinly slice the potatoes evenly.
3. Melt the butter in a saucepan over medium heat, then add the garlic and cook for about 30 seconds.
4. Whisk in the flour and cook for 1 minute until smooth.
5. Slowly whisk in the milk and heavy cream until no lumps remain.
6. Stir in the salt, black pepper, and onion powder, then simmer for 3 to 4 minutes until slightly thickened.
7. Add 1 cup of cheddar cheese and 1/4 cup of Parmesan cheese, stirring until melted and smooth.
8. Layer one-third of the sliced potatoes in the prepared baking dish.
9. Spoon one-third of the sauce over the potatoes.
10. Repeat the layers two more times, then top with the remaining cheddar and Parmesan.
11. Cover with foil and bake for 45 minutes.
12. Remove the foil and bake for 20 to 25 minutes more, until the top is golden and the potatoes are tender.
13. Rest for 10 minutes, then garnish with parsley and serve warm.
Notes
For the best texture, slice the potatoes as evenly as possible so they bake at the same rate.
