Description
Easy Steamed Cassava Cake is a soft, chewy, and creamy Filipino dessert made with grated cassava, coconut milk, condensed milk, and cheese for a simple homemade treat that is perfect for merienda, parties, or make-ahead dessert cravings.
Ingredients
1 kg grated cassava
1 cup coconut milk
1 cup evaporated milk
3/4 cup sweetened condensed milk
2 large eggs
1/2 cup sugar
1/4 cup melted butter
1 teaspoon vanilla extract
1/4 teaspoon salt
1/2 cup grated cheese
Instructions
1. Grease an 8 inch heatproof pan and prepare a steamer over medium heat. Wrap the steamer lid with a clean towel to keep water from dripping onto the cake.
2. In a large bowl, whisk together the coconut milk, evaporated milk, sweetened condensed milk, eggs, sugar, melted butter, vanilla extract, and salt until smooth.
3. Stir in the grated cassava until the mixture is fully combined.
4. Pour the batter into the prepared pan and spread it evenly.
5. Steam for 45 to 55 minutes, checking the water level as needed, until the cake is mostly set and a toothpick inserted near the center comes out mostly clean.
6. Sprinkle the grated cheese over the top and steam for 5 minutes more.
7. Remove from the steamer and let the cake cool completely before slicing and serving.
Notes
Use frozen grated cassava only after thawing it completely and draining any excess liquid.
Do not steam over very high heat or the cake may cook unevenly.
For the best texture, chill the cake before slicing if you want cleaner pieces.
