Ingredients
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon ground nutmeg
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup light brown sugar
2 large eggs
1 cup eggnog
1 teaspoon vanilla extract
2 tablespoons powdered sugar, optional for topping
Instructions
1. Preheat the oven to 350°F and grease a 9×5-inch loaf pan or line it with parchment paper.
2. In a medium bowl, whisk together the flour, baking powder, salt, and nutmeg.
3. In a large bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy.
4. Add the eggs one at a time, mixing well after each addition.
5. Mix in the vanilla extract and eggnog until smooth.
6. Add the dry ingredients to the wet ingredients and stir gently just until combined.
7. Pour the batter into the prepared loaf pan and smooth the top.
8. Bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean.
9. Let the bread cool in the pan for 10 to 15 minutes, then transfer it to a wire rack to cool completely.
10. Dust with powdered sugar before serving if desired.
Notes
This bread tastes even better the next day after the flavors have settled.
Do not overmix the batter or the loaf can turn dense instead of soft and tender.
