Ingredients
1 pound fresh green beans
1 cup all purpose flour
2 large eggs
2 tablespoons milk
1 cup seasoned breadcrumbs
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
vegetable oil for frying
Instructions
1. Trim the ends from the green beans, rinse them well, and blanch them in boiling salted water for 2 to 3 minutes. Transfer them to ice water, drain, and pat completely dry.
2. Place the flour in one shallow bowl. In a second bowl, whisk together the eggs and milk. In a third bowl, mix the breadcrumbs, Parmesan, garlic powder, onion powder, paprika, salt, and black pepper.
3. Dredge the green beans in the flour, then dip them into the egg mixture, and coat them in the breadcrumb mixture. Press lightly so the coating sticks well.
4. Heat about 2 inches of vegetable oil in a deep skillet or heavy pot to 350°F.
5. Fry the breaded green beans in small batches for 2 to 4 minutes, until golden brown and crisp.
6. Transfer to a paper towel lined plate or wire rack and serve hot with your favorite dipping sauce.
Notes
Use very dry green beans before breading so the coating sticks better and fries up crisp.
Fry in small batches to keep the oil temperature steady and prevent soggy breading.
For the best texture, reheat leftovers in the oven or air fryer instead of the microwave.
