Ingredients
2 large chicken breasts
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika
2 tablespoons olive oil
4 tablespoons unsalted butter
5 garlic cloves, minced
1/2 cup chicken broth
1 tablespoon lemon juice
1 tablespoon chopped fresh parsley
Instructions
1. Pat the chicken dry with paper towels. Slice thick chicken breasts in half horizontally or pound them to an even thickness.
2. Season both sides of the chicken with salt, black pepper, and paprika.
3. Heat the olive oil in a large skillet over medium high heat.
4. Add the chicken and cook for 4 to 5 minutes per side, or until golden brown and cooked through.
5. Transfer the chicken to a plate and reduce the heat to medium.
6. Add the butter to the same skillet, then stir in the minced garlic and cook for 30 seconds to 1 minute until fragrant.
7. Pour in the chicken broth and lemon juice, scraping up the browned bits from the bottom of the pan.
8. Return the chicken to the skillet and spoon the garlic butter sauce over the top.
9. Simmer for 2 to 3 minutes so the sauce thickens slightly and the chicken absorbs more flavor.
10. Sprinkle with chopped parsley and serve hot.
Notes
Use freshly minced garlic for the best flavor because jarred garlic can taste dull in a simple sauce like this.
Do not overcrowd the skillet or the chicken may steam instead of developing a golden crust. Cook in batches if needed.
A small squeeze of extra lemon juice at the end can brighten the butter sauce if you want a lighter finish.
