Ingredients
1 lb sirloin steak
2 tablespoons salted butter
3 garlic cloves, minced
8 oz shell pasta
1 ½ cups shredded white cheddar cheese
1 cup milk or cream
2 chipotle peppers in adobo, chopped
1 tablespoon olive oil
Salt and pepper to taste
Instructions
1. Heat olive oil in a skillet over medium-high heat. Pat steak dry and season with salt and pepper.
2. Sear steak bites in batches, 1–2 minutes per side, until golden brown. Set aside.
3. Lower heat to medium. Add butter and garlic to skillet and cook until fragrant. Toss steak back in to coat with garlic butter. Remove from heat.
4. Cook shell pasta in salted boiling water until al dente. Reserve ½ cup of pasta water, then drain.
5. In a saucepan, warm milk or cream over low heat. Stir in chopped chipotle peppers and white cheddar, whisking until smooth. Add a splash of pasta water if needed to thin.
6. Add cooked pasta to cheese sauce and stir to coat.
7. Serve steak bites over creamy chipotle shells. Enjoy hot!
Notes
This dish is best served fresh, but leftovers can be stored for 3 days.
Use ribeye or strip steak for a richer flavor if desired.
Adjust chipotle to your heat preference — 1 for mild, 3+ for spicy lovers!
