Description

Healthy Spring Broccoli Pasta Salad is a fresh, creamy, and colorful pasta salad made with rotini, crisp broccoli, cucumber, cherry tomatoes, feta, and a light lemon yogurt dressing. This easy spring pasta salad is perfect for meal prep, picnics, potlucks, or a healthy make ahead lunch.


Ingredients

12 ounces rotini pasta

3 cups small broccoli florets

1 cup chopped cucumber

1 cup halved cherry tomatoes

1/2 cup thinly sliced red onion

1/2 cup shredded carrots

1/3 cup chopped fresh parsley

1/2 cup crumbled feta cheese

1/2 cup plain Greek yogurt

3 tablespoons mayonnaise

2 tablespoons olive oil

2 tablespoons fresh lemon juice

1 tablespoon apple cider vinegar

1 teaspoon Dijon mustard

1 teaspoon honey

1 small garlic clove, minced

3/4 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Bring a large pot of salted water to a boil and cook the rotini until al dente. Drain and rinse briefly under cool water.

2. Blanch the broccoli florets in boiling water for 1 minute, then transfer them to ice water or very cold water. Drain well.

3. In a medium bowl, whisk together the Greek yogurt, mayonnaise, olive oil, lemon juice, apple cider vinegar, Dijon mustard, honey, garlic, salt, and black pepper until smooth.

4. In a large mixing bowl, combine the cooked pasta, broccoli, cucumber, cherry tomatoes, red onion, shredded carrots, parsley, and feta.

5. Pour the dressing over the salad and toss until everything is evenly coated.

6. Cover and chill for at least 30 minutes before serving. Toss again before serving and adjust seasoning if needed.

Notes

Use very small broccoli florets so every bite feels balanced and easy to eat.

For the best texture, do not overcook the pasta or the broccoli.

This salad tastes even better after chilling, so it is a great make ahead recipe.
