Description

Herb-Crusted Christmas Beef Roast is a festive holiday dinner made with tender beef, fresh rosemary, thyme, garlic, and a savory herb crust that roasts to perfection for a juicy, elegant Christmas main course.


Ingredients

4 to 5 pounds beef rib roast or top sirloin roast

2 tablespoons olive oil

4 cloves garlic, minced

2 tablespoons fresh rosemary, finely chopped

2 tablespoons fresh thyme leaves

1 tablespoon Dijon mustard

2 teaspoons kosher salt

1 teaspoon black pepper

1 teaspoon onion powder

1 tablespoon unsalted butter, softened


Instructions

1. Pat the beef roast dry with paper towels and let it sit at room temperature for 30 to 45 minutes.

2. Preheat the oven to 450°F and place the roast in a roasting pan or on a rack set inside a baking dish.

3. In a small bowl, mix the olive oil, garlic, rosemary, thyme, Dijon mustard, kosher salt, black pepper, onion powder, and softened butter into a thick herb paste.

4. Rub the herb mixture all over the beef roast, coating the top and sides evenly.

5. Roast the beef at 450°F for 15 minutes to build a flavorful crust.

6. Reduce the oven temperature to 325°F and continue roasting for 45 to 65 minutes, or until the internal temperature reaches 125°F to 130°F for medium rare.

7. Remove the roast from the oven and tent it loosely with foil.

8. Let the roast rest for 20 to 25 minutes before slicing.

9. Slice against the grain and serve warm with the pan juices spooned over the top.
