Description

Ingredients

115 g unsalted butter

100 g brown sugar

2 tbsp golden syrup

½ tsp baking soda

100 g all-purpose flour

100 g rolled oats

¼ tsp salt

150 g milk or dark chocolate (for topping)


Instructions

1. Preheat the oven to 350°F (175°C) and line a baking tray with parchment paper.

2. In a saucepan over medium heat, melt the butter, golden syrup, and brown sugar until smooth.

3. Remove the pan from heat and stir in the baking soda. The mixture will bubble slightly.

4. In a large bowl, mix together the flour, rolled oats, and salt.

5. Pour the wet mixture into the dry ingredients and stir until fully combined.

6. Scoop heaping tablespoons of dough and roll into balls. Flatten gently and place on the prepared tray.

7. Bake for 12–15 minutes until golden at the edges. Let cool on tray for 5 minutes, then move to a wire rack.

8. Melt the chocolate in a microwave or double boiler. Spread generously over each cooled biscuit.

9. Allow the chocolate to set at room temperature or refrigerate briefly before serving.

Notes

Use rolled oats for the best chewy-crisp texture.

Don’t overbake; the cookies will firm up as they cool.

You can pulse the oats slightly if you prefer a less rustic texture.
