Description

Loaded Baked Potato Casserole is a creamy, cheesy, bacon-packed potato casserole made with fluffy russet potatoes, sour cream, cheddar cheese, and green onions for the ultimate comfort food side dish or easy family dinner.


Ingredients

6 medium russet potatoes

6 tablespoons butter

1 cup sour cream

1/2 cup milk

2 cups shredded cheddar cheese, divided

8 slices bacon, cooked and crumbled

4 green onions, sliced

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder


Instructions

1. Preheat the oven to 375°F and grease a 9×13-inch baking dish.

2. Bake the russet potatoes until fork tender, about 50 to 60 minutes, then let them cool slightly.

3. Peel the potatoes if desired and cut them into chunks.

4. Place the potatoes in a large bowl with the butter, sour cream, milk, salt, black pepper, and garlic powder.

5. Mash the mixture until creamy but still slightly textured.

6. Stir in 1 1/2 cups of the shredded cheddar cheese, most of the crumbled bacon, and most of the sliced green onions.

7. Spoon the potato mixture into the prepared baking dish and spread it evenly.

8. Top with the remaining cheddar cheese and the rest of the bacon.

9. Bake for 20 to 25 minutes, until hot and bubbly and the cheese is melted.

10. Sprinkle with the remaining green onions, let rest for 5 minutes, and serve warm.

Notes

For the best texture, use russet potatoes because they bake up fluffy and mash beautifully.

Do not overmix the potatoes or the casserole can become gummy instead of light and creamy.

You can assemble the casserole a day ahead, cover it, refrigerate it, and bake it when ready to serve.
