Ingredients
2 slices sturdy sandwich bread
1 cup cooked chicken, sliced or shredded
1 avocado
2 slices bacon, cooked
2 slices cheddar or provolone cheese
2 slices tomato
2 leaves romaine or green leaf lettuce
2 thin slices red onion
2 tablespoons mayonnaise
1 teaspoon Dijon mustard
1 teaspoon lemon juice
1/8 teaspoon salt
1/8 teaspoon black pepper
1 teaspoon butter or olive oil
Instructions
1. In a small bowl, mash the avocado with lemon juice, salt, and black pepper until creamy but still slightly textured.
2. In another small bowl, stir together the mayonnaise and Dijon mustard.
3. Lightly spread butter or brush olive oil on the bread, then toast until golden and crisp.
4. Warm the chicken slightly if needed so the sandwich tastes freshly made.
5. Spread the mayonnaise mixture on one slice of bread and the avocado mixture on the other slice.
6. Layer the lettuce, chicken, cheese, bacon, tomato, and red onion over the bread.
7. Close the sandwich, slice in half, and serve immediately.
Notes
Use sturdy bread like sourdough, ciabatta, or thick whole grain so the sandwich holds all the fillings well.
To keep the avocado bright and fresh, mix it with lemon juice right before assembling the sandwich.
For extra flavor, add a pinch of garlic powder to the avocado or use pepper jack cheese for a little heat.
