Description
Lucky Charms Cookies are soft, buttery, colorful cookies made with vanilla cookie dough and Lucky Charms marshmallows for a fun dessert that is perfect for parties, holidays, bake sales, and easy family baking days.
Ingredients
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar
1 large egg
2 teaspoons vanilla extract
1 1/2 cups Lucky Charms marshmallows
1/2 cup white chocolate chips, optional
Instructions
1. Preheat the oven to 350°F and line two baking sheets with parchment paper.
2. In a medium bowl, whisk together the flour, baking soda, and salt.
3. In a large bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy.
4. Add the egg and vanilla extract, then mix until smooth.
5. Add the dry ingredients to the wet ingredients and mix just until combined.
6. Fold in the Lucky Charms marshmallows and white chocolate chips if using.
7. Scoop the dough into evenly sized balls and place them on the prepared baking sheets, leaving space between each cookie.
8. Press a few extra marshmallows on top if you want a more colorful finish.
9. Bake for 9 to 11 minutes, until the edges are lightly golden and the centers are just set.
10. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For the best look, save a few marshmallows to press on top of the dough right before baking.
Do not overbake the cookies if you want them to stay soft in the center.
If the dough feels too warm or sticky, chill it for 20 minutes before baking.
