Ingredients
3 pounds beef chuck roast
2 tablespoons olive oil
1 large yellow onion
4 garlic cloves
2 cups beef broth
1 tablespoon Worcestershire sauce
2 tablespoons tomato paste
3 carrots
4 sprigs fresh thyme
1 1/2 teaspoons salt
1 teaspoon black pepper
1 tablespoon cornstarch
2 tablespoons water
2 tablespoons fresh parsley
Instructions
1. Preheat the oven to 325°F. Pat the beef dry with paper towels and season all over with salt and black pepper.
2. Heat the olive oil in a large Dutch oven over medium-high heat. Sear the beef on all sides until deeply browned, then transfer it to a plate.
3. Add the sliced onion to the pot and cook until softened and lightly golden. Stir in the garlic and tomato paste and cook for 1 to 2 minutes.
4. Pour in the beef broth and Worcestershire sauce, scraping up any browned bits from the bottom of the pot.
5. Add the carrots and thyme, then return the beef to the pot. Cover with a lid.
6. Transfer to the oven and braise for 3 to 3 1/2 hours, or until the beef is fork tender.
7. Remove the beef from the pot and keep warm. Mix the cornstarch and water in a small bowl, then stir it into the hot liquid if you want a thicker gravy. Simmer for a few minutes until slightly thickened.
8. Slice or shred the beef, spoon the sauce and vegetables over the top, and finish with chopped parsley before serving.
Notes
Use chuck roast for the best texture because it becomes beautifully tender during slow cooking.
Searing the beef first adds a deeper flavor to the final dish, so do not skip that step.
Store leftovers with some of the cooking liquid to keep the beef moist and flavorful when reheated.
