Description

Mint Chocolate Chip Protein Ice Cream is a creamy, refreshing high protein dessert made with Greek yogurt, protein powder, peppermint extract, and mini chocolate chips for an easy homemade frozen treat.


Ingredients

1 cup Greek yogurt

1 scoop vanilla protein powder

1/2 cup milk

2 tablespoons maple syrup or honey

1/2 teaspoon peppermint extract

1/2 teaspoon vanilla extract

2 tablespoons mini chocolate chips

1 pinch salt

2 drops green food coloring optional


Instructions

1. Add the Greek yogurt, vanilla protein powder, milk, maple syrup or honey, peppermint extract, vanilla extract, and salt to a blender or food processor and blend until smooth and creamy. Add the green food coloring if using and blend briefly again.

2. Taste the mixture and adjust if needed with a little more sweetener or the tiniest extra drop of peppermint extract.

3. Pour the mixture into a freezer-safe container and stir in the mini chocolate chips.

4. Cover and freeze for 3 to 4 hours until firm enough to scoop. Stir once after the first hour if possible for a creamier texture.

5. Let the ice cream sit at room temperature for 5 to 10 minutes before scooping and serving.

Notes

Use full-fat or 2 percent Greek yogurt for a creamier texture.

Blend the base until completely smooth so the protein powder does not leave any graininess.

Store the ice cream in an airtight container with a layer of wrap pressed against the top to help reduce ice crystals.
