Description

Outrageously Good Stuffed Celery is a creamy, crunchy appetizer made with fresh celery, cream cheese, cheddar, bacon, and simple seasonings for an easy party snack, holiday appetizer, or make ahead finger food everyone loves.


Ingredients

8 large celery stalks

8 oz cream cheese, softened

2 tbsp mayonnaise

1 cup shredded cheddar cheese

2 green onions, finely sliced

1/4 cup chopped pecans

4 slices cooked bacon, crumbled

1/2 tsp garlic powder

1/4 tsp salt

1/4 tsp black pepper

1/8 tsp paprika


Instructions

1. Wash the celery stalks well, dry them completely, trim the ends, and cut each stalk into 3-inch pieces.

2. In a medium bowl, mix the softened cream cheese, mayonnaise, shredded cheddar, green onions, garlic powder, salt, and black pepper until smooth.

3. Fold in most of the chopped pecans and crumbled bacon, saving a little for topping if desired.

4. Spoon or spread the filling into the center of each celery piece.

5. Sprinkle the tops with the reserved bacon, pecans, and paprika.

6. Chill the stuffed celery for 20 to 30 minutes before serving for the best texture and flavor.

Notes

Use softened cream cheese so the filling blends smoothly without lumps.

Pat the celery dry very well before filling so the mixture stays in place.

For the best crunch, serve this recipe the same day you make it.
