Description

Peanut Butter Cottage Cheese Cheesecake Cups are a creamy, protein-packed dessert made with cottage cheese, peanut butter, cream cheese, and a buttery graham cracker crust. These mini cheesecake cups are easy to make, rich in flavor, smooth in texture, and perfect for a healthy cheesecake-style treat, high-protein dessert, or make-ahead snack.


Ingredients

1 1/4 cups graham cracker crumbs

4 tablespoons melted butter

2 tablespoons granulated sugar

8 ounces cream cheese, softened

1 cup cottage cheese

1/2 cup creamy peanut butter

1/3 cup granulated sugar

1 teaspoon vanilla extract

1 large egg

1/8 teaspoon salt

1/3 cup melted chocolate

2 tablespoons chopped peanuts


Instructions

1. Preheat the oven to 325°F and line a 12-cup muffin pan with paper liners.

2. In a small bowl, mix the graham cracker crumbs, melted butter, and 2 tablespoons sugar until evenly combined.

3. Divide the crust mixture among the muffin cups and press it down firmly into an even layer.

4. In a blender or food processor, blend the cream cheese, cottage cheese, peanut butter, 1/3 cup sugar, vanilla extract, egg, and salt until completely smooth.

5. Spoon the cheesecake filling over each crust, filling each cup nearly to the top.

6. Tap the pan gently on the counter to remove large air bubbles.

7. Bake for 18 to 22 minutes, until the centers are mostly set with a slight wobble.

8. Let the cheesecake cups cool in the pan for 20 minutes.

9. Transfer them to the refrigerator and chill for at least 3 hours.

10. Before serving, drizzle with melted chocolate and sprinkle with chopped peanuts.

Notes

Blend the cottage cheese very well so the filling turns silky and smooth.

Do not overbake the cheesecake cups because they will continue to set as they cool.

For the best texture, chill them fully before serving.
