Description

Quick and Easy Forgotten Chicken is a creamy baked chicken and rice casserole made with pantry staples, tender chicken breasts, savory soup, and fluffy rice for an easy comfort food dinner the whole family will love.


Ingredients

1 cup long grain white rice

2 boneless, skinless chicken breasts

1 can cream of chicken soup

1 can cream of mushroom soup

1 1/2 cups chicken broth

2 tablespoons butter

1 packet onion soup mix

1/4 teaspoon black pepper

1 tablespoon fresh parsley


Instructions

1. Preheat the oven to 350°F and lightly grease a 9×13-inch baking dish.

2. In a large bowl, stir together the rice, cream of chicken soup, cream of mushroom soup, chicken broth, black pepper, and half of the onion soup mix.

3. Pour the rice mixture into the prepared baking dish and spread it evenly.

4. Place the chicken breasts on top of the rice mixture.

5. Dot the chicken with butter and sprinkle the remaining onion soup mix over the top.

6. Cover the dish tightly with foil.

7. Bake for 1 hour and 30 minutes, or until the rice is tender and the chicken is fully cooked.

8. Let the dish rest for 5 to 10 minutes before serving.

9. Sprinkle with fresh parsley if desired, then serve warm.

Notes

Cover the dish tightly with foil so the rice steams properly and does not dry out.

Use long grain white rice for the best texture, since quick rice or brown rice will cook differently.

If the chicken breasts are very thick, you can slice them in half lengthwise so they cook more evenly.
