Description

This Red Velvet Cheesecake Swirl Cake is a rich, velvety dessert with moist red velvet cake and a creamy cheesecake swirl baked right in. Ingredients

2 1/2 cups all-purpose flour

2 tablespoons unsweetened cocoa powder

1 teaspoon baking soda

1/2 teaspoon salt

3/4 cup unsalted butter, softened

1 3/4 cups granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup buttermilk

1 tablespoon red food coloring

1 teaspoon white vinegar

8 ounces cream cheese, softened

1/3 cup granulated sugar

1 large egg

1/2 teaspoon vanilla extract


Instructions

1. Preheat the oven to 350°F and grease a 9×13-inch baking pan or line it with parchment paper.

2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.

3. In a large bowl, beat the butter and sugar until light and fluffy.

4. Add the eggs one at a time, then mix in the vanilla extract.

5. Blend in the buttermilk, red food coloring, and vinegar until smooth.

6. Add the dry ingredients to the wet ingredients and mix just until combined.

7. In a separate bowl, beat the cream cheese, sugar, egg, and vanilla extract until smooth.

8. Spread most of the red velvet batter into the prepared pan, reserving a few spoonfuls for the top.

9. Dollop the cheesecake mixture over the batter, then add the remaining red velvet batter in small spoonfuls.

10. Use a knife or skewer to gently swirl the cheesecake and cake batter together.

11. Bake for 35 to 40 minutes, or until the center is set and a tester inserted into the cake portion comes out with a few moist crumbs.

12. Cool completely before slicing and serving.

Notes

Do not overmix the batter once the flour is added or the cake can turn dense.

Use full-fat brick cream cheese for the smoothest swirl and best texture.

Let the cake cool fully before cutting so the cheesecake layer sets neatly.
