Rotisserie Chicken Mushroom Soup is a creamy, cozy dinner made with tender rotisserie chicken, earthy mushrooms, aromatic vegetables, chicken broth, and a touch of cream for a rich, comforting soup that is easy enough for weeknights and perfect for meal prep.
Ingredients
2 tablespoons butter
1 tablespoon olive oil
1 medium yellow onion, diced
2 medium carrots, diced
2 celery stalks, diced
3 cloves garlic, minced
16 ounces cremini mushrooms, sliced
2 tablespoons all purpose flour
6 cups chicken broth
1 cup heavy cream
3 cups rotisserie chicken, shredded
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons fresh parsley, chopped
Instructions
1. Heat the butter and olive oil in a large soup pot or Dutch oven over medium heat. Add the onion, carrots, and celery, then cook for 5 to 6 minutes until softened.
2. Stir in the garlic and cook for 30 seconds until fragrant.
3. Add the sliced mushrooms and cook for 8 to 10 minutes, stirring occasionally, until they release their moisture and begin to brown.
4. Sprinkle the flour over the vegetables and mushrooms, then stir well for 1 minute so the flour cooks into the mixture.
5. Slowly pour in the chicken broth while stirring to keep the soup smooth.
6. Add the dried thyme, salt, and black pepper, then bring the soup to a gentle simmer.
7. Stir in the shredded rotisserie chicken and simmer for 12 to 15 minutes to let the flavors come together.
8. Lower the heat and stir in the heavy cream. Warm gently for 2 to 3 minutes without boiling.
9. Stir in the chopped parsley, taste for seasoning, and serve hot.
Notes
Use cremini mushrooms for a deeper, earthier flavor, but white mushrooms also work well.
Do not rush the mushroom step because letting them brown adds much more flavor to the soup.
If the soup thickens after storing, stir in a splash of broth while reheating to loosen it.
