Description

Saucy Herb and Garlic Chicken Skillet with Mashed Potatoes is a cozy chicken dinner made with juicy pan seared chicken, creamy mashed potatoes, and a rich garlic herb sauce that brings everything together in one comforting skillet meal.


Ingredients

2 large boneless skinless chicken breasts, halved lengthwise

2 pounds Yukon Gold potatoes, peeled and cut into chunks

4 tablespoons butter, divided

1 tablespoon olive oil

6 cloves garlic, minced

1 cup chicken broth

3/4 cup heavy cream

1/2 cup whole milk, warmed

1/3 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon onion powder

1 teaspoon salt, divided

1/2 teaspoon black pepper, divided

2 tablespoons fresh parsley, chopped


Instructions

1. Place the potatoes in a large pot of salted water and boil until fork tender, about 15 to 18 minutes.

2. Drain the potatoes well, then mash with 2 tablespoons butter, warm milk, 1/4 cup of the heavy cream, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until smooth and fluffy. Cover and keep warm.

3. Pat the chicken dry and season both sides with the remaining salt, remaining black pepper, onion powder, and Italian seasoning.

4. Heat the olive oil and 1 tablespoon butter in a large skillet over medium heat. Sear the chicken for 4 to 5 minutes per side until golden and nearly cooked through, then transfer to a plate.

5. In the same skillet, melt the remaining 1 tablespoon butter and add the garlic. Cook for 30 seconds until fragrant.

6. Pour in the chicken broth and scrape up the browned bits from the pan. Stir in the remaining heavy cream and Parmesan cheese, then simmer for 3 to 4 minutes until the sauce thickens slightly.

7. Return the chicken to the skillet and spoon the sauce over the top. Simmer for 4 to 5 minutes until the chicken is fully cooked and tender.

8. Sprinkle with fresh parsley and serve the chicken and sauce over warm mashed potatoes.

Notes

Use evenly sized potato chunks so they cook at the same rate and mash smoothly.

If the chicken breasts are very thick, slice them in half horizontally for quicker and more even cooking.

Add a splash of broth or milk when reheating leftovers to loosen the sauce and refresh the mashed potatoes.
