Description

Sausage Breakfast Casserole is a hearty, cheesy breakfast bake made with savory sausage, eggs, bread, and cheddar cheese, making it a perfect make-ahead brunch recipe for holidays, weekends, and easy family breakfasts.


Ingredients

1 pound breakfast sausage

6 large eggs

2 cups whole milk

6 cups day-old bread, cubed

2 cups shredded cheddar cheese

1/2 cup diced onion

1/2 cup diced bell pepper

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

2 tablespoons chopped parsley

1 tablespoon butter


Instructions

1. Preheat the oven to 350°F and grease a 9×13-inch baking dish with butter.

2. In a skillet over medium heat, cook the breakfast sausage until browned, breaking it into crumbles as it cooks.

3. Add the diced onion and bell pepper to the skillet and cook for a few minutes until slightly softened. Drain excess grease.

4. Spread the cubed bread evenly in the prepared baking dish.

5. Spoon the cooked sausage mixture over the bread, then sprinkle the shredded cheddar cheese on top.

6. In a large bowl, whisk together the eggs, milk, salt, black pepper, and garlic powder until smooth.

7. Pour the egg mixture evenly over the bread, sausage, and cheese.

8. Press the bread down lightly so it begins to soak up the custard.

9. Let the casserole sit for 10 to 15 minutes, or cover and refrigerate overnight.

10. Bake uncovered for 40 to 45 minutes, until the center is set and the top is lightly golden.

11. Let the casserole rest for 10 minutes before slicing.

12. Sprinkle with chopped parsley and serve warm.

Notes

Day-old bread works best because it soaks up the egg mixture without getting too soft.

You can assemble the casserole the night before and bake it fresh in the morning.

Add extra vegetables or swap the cheese to make the casserole fit your taste.
