Description

Sheet Pan Chicken Fajitas with Cilantro and Lime is a quick and flavorful chicken fajitas recipe made with juicy chicken, bell peppers, red onion, fresh lime juice, and cilantro, all roasted together on one pan for an easy weeknight dinner.


Ingredients

1 1/2 pounds boneless skinless chicken breasts, sliced into strips

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 green bell pepper, sliced

1 medium red onion, sliced

2 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons fresh lime juice

1/4 cup chopped fresh cilantro

8 small flour tortillas


Instructions

1. Preheat the oven to 425°F and line a large sheet pan with parchment paper or lightly grease it.

2. Add the sliced chicken, bell peppers, and red onion to the sheet pan.

3. Drizzle with olive oil, then sprinkle on the chili powder, smoked paprika, cumin, garlic powder, onion powder, salt, and black pepper.

4. Toss everything together until the chicken and vegetables are evenly coated, then spread into a single layer.

5. Roast for 20 to 25 minutes, stirring once halfway through, until the chicken is cooked through and the vegetables are tender with lightly browned edges.

6. Squeeze the fresh lime juice over the hot fajitas and sprinkle with chopped cilantro.

7. Serve warm with flour tortillas and any favorite toppings.

Notes

Use a large sheet pan so the chicken and vegetables can roast instead of steam.

Slice the chicken and vegetables into similar sized strips for even cooking.

For extra color and char, broil the pan for 2 to 3 minutes at the end while watching closely.
