Description
Strawberry Cheesecake Puppy Chow is a sweet no-bake snack made with Rice Chex cereal, white chocolate, strawberry flavor, cheesecake pudding, powdered sugar, and graham cracker crumbs for a crunchy dessert that tastes like strawberry cheesecake in every bite.
Ingredients
8 cups Rice Chex cereal
10 ounces white chocolate chips
4 tablespoons unsalted butter
3 tablespoons strawberry gelatin powder
3 tablespoons cheesecake instant pudding mix
1 teaspoon vanilla extract
1 1/2 cups powdered sugar
1/2 cup crushed graham crackers
1/2 cup crushed freeze-dried strawberries
1/8 teaspoon salt
Instructions
1. Add the Rice Chex cereal to a very large mixing bowl and set aside. In a large zip-top bag or covered container, combine the powdered sugar, cheesecake pudding mix, and 1 tablespoon of the strawberry gelatin powder.
2. In a microwave-safe bowl, combine the white chocolate chips and butter. Microwave in 20-second intervals, stirring between each one, until the mixture is smooth.
3. Stir the remaining 2 tablespoons strawberry gelatin powder, vanilla extract, and salt into the melted white chocolate mixture until fully combined.
4. Pour the melted coating over the cereal and gently fold until the cereal is evenly coated.
5. Transfer the coated cereal to the prepared bag or container and shake until all of the pieces are covered in the powdered sugar mixture.
6. Spread the puppy chow onto a parchment-lined baking sheet or tray and sprinkle with the crushed graham crackers and crushed freeze-dried strawberries.
7. Let it sit for 15 to 20 minutes until the coating is set, then transfer to a serving bowl or airtight container.
Notes
Use gentle folding when mixing so the cereal stays crisp and does not break apart too much.
Freeze-dried strawberries work better than fresh strawberries because they add flavor without making the coating soggy.
For a stronger cheesecake flavor, add an extra tablespoon of cheesecake pudding mix to the powdered sugar coating.
