Description

Strawberry Crunch Cheesecake Bites are creamy, no-bake mini cheesecake treats coated in a buttery strawberry crunch topping for an easy dessert packed with strawberry flavor, cheesecake richness, and sweet cookie texture.


Ingredients

16 oz cream cheese, softened

1 cup powdered sugar

1 tsp vanilla extract

1 1/2 cups whipped topping

18 golden sandwich cookies, crushed

12 strawberry wafer cookies, crushed

1 oz freeze-dried strawberries, crushed

3 tbsp butter, melted

4 fresh strawberries, finely diced or sliced for garnish


Instructions

1. Beat the softened cream cheese in a large bowl until completely smooth and fluffy.

2. Add the powdered sugar and vanilla extract, then mix until the filling is creamy and fully combined.

3. Fold in the whipped topping gently until the cheesecake mixture is light and smooth.

4. Cover the bowl and chill the filling in the refrigerator for 30 to 45 minutes until firm enough to scoop.

5. In a separate bowl, combine the crushed golden sandwich cookies, crushed strawberry wafer cookies, crushed freeze-dried strawberries, and melted butter. Mix until the crumbs look evenly coated.

6. Scoop small portions of the chilled cheesecake mixture and roll them into bite-sized balls.

7. Roll each cheesecake ball in the strawberry crunch coating, pressing lightly so the crumbs stick well.

8. Place the coated bites on a lined tray or plate and chill for 20 to 30 minutes before serving.

9. Garnish with fresh strawberries if desired and serve cold.

Notes

Use full-fat cream cheese for the richest texture and the best flavor.

If the cheesecake mixture becomes too soft while rolling, chill it again for 10 to 15 minutes before continuing.

For cleaner, neater bites, lightly chill the coated cheesecake bites before adding any fresh strawberry garnish.
