Ingredients
2 cups all-purpose flour
3/4 cup granulated sugar
1/2 cup light brown sugar
1 teaspoon baking powder
1/2 teaspoon salt
1 cup unsalted butter, cold and cubed
1 large egg
2 teaspoons vanilla extract
4 cups fresh peaches, peeled and sliced
1 tablespoon lemon juice
2 tablespoons cornstarch
1 1/2 teaspoons ground cinnamon
Instructions
1. Preheat the oven to 350°F and line a 9×13-inch baking pan with parchment paper.
2. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
3. Cut in the cold butter until the mixture looks crumbly, then mix in the egg and vanilla until a soft dough forms.
4. Press two-thirds of the dough evenly into the prepared pan to make the bottom crust.
5. In another bowl, toss the sliced peaches with lemon juice and cornstarch until evenly coated.
6. Spread the peach mixture evenly over the crust layer.
7. Mix the remaining dough with the brown sugar and cinnamon until crumbly, then scatter it over the peaches.
8. Bake for 38 to 45 minutes, until the top is golden and the fruit is bubbling around the edges.
9. Cool completely before slicing into bars for the cleanest texture.
Notes
Use ripe but slightly firm peaches so the bars hold their shape and do not turn mushy.
If using canned or frozen peaches, drain them very well before adding them to the filling.
For extra neat slices, chill the bars for 30 minutes after cooling to room temperature.
