A bold and healthy Tasty Street Corn Chicken Bowl made with grilled chicken, roasted corn, creamy lime sauce, cotija cheese, and rice. Perfect for meal prep, quick dinners, and gluten-free diets.
Ingredients
1 lb chicken breasts
2 cups corn kernels
1 cup cooked rice
1/2 cup cotija cheese
1/4 cup Greek yogurt
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/4 cup chopped fresh cilantro
1 lime, zest and juice
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Slice chicken breasts and season with chili powder, garlic powder, salt, and pepper.
2. Grill or pan-sear chicken until golden and cooked through, about 6-8 minutes.
3. Char the corn in a hot pan or grill until lightly golden and crisp.
4. In a bowl, mix Greek yogurt, lime zest, lime juice, olive oil, a pinch of chili powder, and salt for the sauce.
5. Fill each bowl with cooked rice as the base.
6. Top with grilled chicken, charred corn, cotija cheese, and fresh cilantro.
7. Drizzle with the creamy lime yogurt sauce.
8. Serve immediately with lime wedges, or store components separately for meal prep.
Notes
Use fresh or frozen corn, but make sure it’s dry before charring.
The sauce can be doubled and stored for use as a dip or dressing.
Great served warm or cold and holds up well in meal prep.
