Description

Tex-Mex Chicken Taco Casserole is a cheesy, hearty chicken casserole made with shredded chicken, taco seasoning, salsa, beans, corn, tortillas, and melted cheese for an easy Tex-Mex dinner the whole family will love.


Ingredients

3 cups cooked shredded chicken

1 tablespoon olive oil

1 small onion, chopped

2 cloves garlic, minced

1 packet taco seasoning

1 1/2 cups salsa

1 can black beans, drained and rinsed

1 cup corn kernels

4 ounces cream cheese, softened

1/2 cup sour cream

1 1/2 cups shredded cheddar cheese

1 1/2 cups shredded Monterey Jack cheese

8 small corn tortillas

2 tablespoons chopped fresh cilantro

2 green onions, sliced

1 jalapeño, sliced optional


Instructions

1. Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.

2. Heat the olive oil in a skillet over medium heat. Add the chopped onion and cook until softened, about 4 minutes. Stir in the garlic and cook for 30 seconds.

3. Add the shredded chicken, taco seasoning, salsa, black beans, and corn to the skillet. Stir well until everything is coated and heated through.

4. Add the cream cheese and sour cream, then stir until the filling is creamy and evenly combined.

5. Arrange a layer of corn tortillas in the bottom of the prepared baking dish.

6. Spoon half of the chicken mixture over the tortillas and sprinkle with half of the cheddar and Monterey Jack cheese.

7. Repeat with another layer of tortillas, the remaining chicken mixture, and the rest of the cheese.

8. Bake for 25 to 30 minutes, until hot and bubbly and the cheese is melted.

9. Let the casserole rest for 10 minutes before serving.

10. Garnish with fresh cilantro, green onions, and jalapeño if desired.

Notes

This casserole is a great way to use rotisserie chicken and makes dinner prep much faster.

Let the casserole rest before slicing so the layers hold together better when serving.

Shred your own cheese for the best melt and a creamier final texture.
