Description

The Ultimate Biscoff Poke Cake is a rich and creamy cookie butter dessert made with soft vanilla cake, sweetened condensed milk, whipped topping, and crushed Biscoff cookies for an easy make-ahead treat that is perfect for parties, holidays, and family gatherings.


Ingredients

1 box vanilla cake mix

3 large eggs

1/2 cup vegetable oil

1 cup water

14 ounces sweetened condensed milk

1 cup Biscoff cookie butter

8 ounces whipped topping

12 Biscoff cookies, crushed

1/4 cup melted Biscoff cookie butter for drizzle


Instructions

1. Preheat the oven according to the cake mix package directions and grease a 9×13-inch baking dish.

2. In a large bowl, combine the vanilla cake mix, eggs, vegetable oil, and water, then mix until smooth.

3. Pour the batter into the prepared baking dish and bake according to the package directions until the center is set.

4. Let the cake cool for 10 to 15 minutes.

5. Use the handle of a wooden spoon to poke holes all over the top of the cake.

6. In a bowl, stir the sweetened condensed milk and 1 cup Biscoff cookie butter until smooth and pourable.

7. Slowly pour the Biscoff mixture over the cake, making sure it flows into the holes.

8. Let the cake cool completely, then refrigerate for at least 2 hours.

9. Spread the whipped topping evenly over the chilled cake.

10. Sprinkle the crushed Biscoff cookies over the top.

11. Drizzle with 1/4 cup melted Biscoff cookie butter.

12. Slice and serve cold.

Notes

For the smoothest filling, warm the Biscoff cookie butter for a few seconds before mixing it with the sweetened condensed milk.

Chilling the cake for at least 2 hours makes the texture much better and helps the flavors settle into every bite.

Add the crushed Biscoff cookies just before serving if you want the topping to keep more crunch.
