Description

Ingredients

1 cup unsalted butter, softened

3/4 cup powdered sugar

1 tablespoon lemon zest

1/4 cup cornstarch

1/2 cup powdered sugar, for dusting


Instructions

1. Preheat the oven to 350°F and line a baking sheet with parchment paper.

2. In a large bowl, beat the softened butter and powdered sugar until light and fluffy.

3. Mix in the lemon zest, fresh lemon juice, and vanilla extract until smooth.

4. In a separate bowl, whisk together the flour, cornstarch, and salt.

5. Add the dry ingredients to the wet ingredients and mix just until a soft dough forms.

6. Chill the dough for 30 minutes to make shaping easier.

7. Scoop or roll the dough into small balls and place them on the prepared baking sheet.

8. Bake for 10 to 12 minutes, until the bottoms are lightly set and the tops remain pale.

9. Cool for 5 minutes, then dust or roll the cookies in powdered sugar.
