Ingredients
1 cup all-purpose flour
1 cup chopped pecans
1/2 cup unsalted butter, melted
8 ounces cream cheese, softened
1 cup powdered sugar
16 ounces whipped topping, divided
1 can pumpkin puree, 15 ounces
2 boxes instant vanilla pudding mix, 3.4 ounces each
3 cups cold milk
1 teaspoon ground cinnamon
1 teaspoon pumpkin pie spice
Instructions
1. Preheat the oven to 350°F and lightly grease a 9×13-inch baking dish.
2. In a bowl, mix the flour, chopped pecans, and melted butter until evenly combined.
3. Press the crust mixture into the prepared baking dish and bake for 15 to 18 minutes until lightly golden.
4. Remove the crust from the oven and let it cool completely.
5. In a medium bowl, beat the softened cream cheese with the powdered sugar until smooth.
6. Fold in 1 cup of whipped topping until the mixture is creamy and spreadable.
7. Spread the cream cheese layer evenly over the cooled crust.
8. In another bowl, whisk together the pumpkin puree, vanilla pudding mix, cold milk, cinnamon, and pumpkin pie spice until thick and smooth.
9. Spread the pumpkin layer carefully over the cream cheese layer.
10. Top with the remaining whipped topping and smooth the surface.
11. Chill for at least 4 hours, or overnight for the cleanest slices.
12. Cut into squares and serve cold.
Notes
Use fully softened cream cheese so the middle layer stays smooth and does not turn lumpy.
Let the crust cool completely before adding the filling so the layers stay neat and distinct.
For the best texture and easiest slicing, chill the dessert overnight instead of serving it too soon.
